Saw it, Pinned it, Did it // WW Santa Fe Salad with Chili-Lime Dressing


That's right ladies and gents...I actually made one of the many (and I mean MANY) recipes I have pinned on my Closet Foodie pin board! Can you believe it?! I have been trying to eat better over the last few months and have started to get somewhat tired of the same old salad or baked chicken with veggies for dinner...So, recently I've been searching and pinning healthy dinner options. This one looked pretty good and when I saw it was a Weight Watchers salad (only 3 points per serving) I was stoked!
Here's what ya need (yields 8 servings, via WeightWatchers.com): 
  • 6 Tbsp reduced-calorie mayonnaise
  • 3 Tbsp cilantro, fresh, finely chopped
  • 3 Tbsp water
  • 1 medium uncooked scallion(s), minced
  • 2 Tbsp fresh lime juice 
  • 2 tsp sugar - I actually used 1 packet of Splenda and tastes the same as sugar and less cals
  • 1/2 tsp chili powder
  •  15 oz canned black beans, rinsed and drained
  •  1 1/2 cup(s) cooked corn kernels, fresh or frozen
  •  2 cup(s) grape tomatoes
  •  1 medium sweet red pepper(s), cut into thin strips (about 1 1/2 cups)
  •  8 cup(s) (shredded) romaine lettuce, cut into thick shreds (about 2 hearts) - I used 1 bag of shredded Iceberg and 1 bag of chopped Romain.
  • // Directions //
    To make dressing, in a small bowl, whisk together mayonnaise, cilantro, water, scallion, lime juice, sugar and chili powder until smooth. Transfer to a jar or a plastic container with a tight-fitting lid and refrigerate until ready to use.
In a large bowl or food storage container, layer remaining ingredients in order listed; cover and refrigerate. (The layering is important so that the lettuce does not wilt or start to brown)
 
{I used some of Bill's parents' canned sweet corn from their garden...delish!}
 
To serve, spoon salad ingredients into a bowl. Shake dressing and then drizzle dressing over salad; toss well to coat. Yields about 2 cups of salad and 1 1/2 tablespoons of dressing per serving.

This salad can be stored (in layers as mentioned above) in the fridge for up to 4 days.


I also added crumbled tortilla chips as a salad topper (not pictured). Bill had a great idea to make this salad in the Summer for a BBQ and add grilled chicken.

This salad is yummy, zesty and full of nutrition goodness from all the veggies!

Why not splurge on shoes for your wedding...Seriously contimplating purchasing these Kate Spade shoes for my own nuptuals...Not sure if I can pull off a sling back / peep toe in November though :/

Weekend Update

I had a wonderful Easter weekend! The sun was shining in Columbus, and we are so close to "no jacket" weather, which is my favorite time of year. This is also the best running outside weather which I also love and miss so much.
 
Friday - I added some fresh, yellow and sunny flowers to my mason jar vase on my desk and found a framed photo of Louie when he was just a fuzzy pup :) Bill and I went to the mall and found a few options for him for our engagement photos (my shopping has been done for weeks...guys leave everything to the last minute, no?). We attended Good Friday service and then had a nice quiet evening at home. We got our beauty rest for our engagement photos the next day...
 
Saturday - We went to Old Dublin for our engagement photos with the lovely Sarah Gaylor (Read more about her here)! I love this part of town because of all the cute little shops and there were plenty of brick and stone backdrops for photos. We also popped into Jeni's ice cream and got a few shots with ice cream cones (Jeni's ice cream is the bomb dot com if you haven't heard of it...She's kind of a local celebrity around these parts)! {Outfit in photo 2: Mint jeans from Francesca's, pink/peach blouse from Old Navy and nude peep toes from Target.}
 
After our glamour shots were done, Bill and I went to The Dublin Village Tavern to celebrate with beers and lunch. It's one of our favorite spots.
 
After the heavy lunch and beer, I needed a good pick me up before we made the 2 hour drive to Bill's hometown for Easter. I've been on a kick of making iced coffee. It's a great little afternoon treat! And of course, it tastes so much better in a mason jar with a pink striped straw :)
 
Sunday - We went to Bill's hometown church for Easter with his family. We had a nice bit potluck lunch with his extended family. His mom even made me an Easter basket :) It is a pretty big one too, filled with all kinds of candy and treats! I felt like a kid again :) {Photo 5 is Bill in his football gear from Junior year of HS... I love looking at old photos of him! He was so adorable! And would you not have a crush on him in HS? I love that he was trying to look tough :) }
